Buckwheat sesame banana bread

Gluten free, dairy free and refined sugar free !

Loaf

  • 2 eggs

  • 3 - 4 bananas - the riper the better

  • 1/3 cup olive oil

  • 1/3 cup maple syrup

  • 1 teaspoon vanilla

  • 1 teaspoon baking soda

  • 3/4 teaspoon baking powder

  • 1 teaspoon kosher salt (or 1/2 teaspoon fine sea salt)

  • 1 1/2 teaspoon cinnamon

  • 1/4 teaspoon cloves

  • 1 cup sunflower seed flour (almond flour works great too)

  • 2/3 cup oat flour

  • 1/3 cup buckwheat flour

  • 1/3 cup sesame seeds (hulled) + 1 tablespoon for sprinkling on top

  • 1 tablespoon turbinado or raw sugar

Preheat oven to 350F and line a standard loaf pan with parchment. Lightly grease

Whisk flours with cinnamon, cloves, baking powder, baking soda and salt in a medium bowl

In a large bowl, mash bananas with the back of a fork until smooth with some chunks. Add eggs and whisk til creamy. Add olive oil, maple syrup and vanilla extract. Whisk again

Add the dry ingredients to the banana mixture and mix until just combined. Fold in 1/3 cup sesame seeds.

Pour batter into prepared loaf pan and smooth the top. Sprinkle with remaining 1 tablespoon sesame seeds and 1 tablespoon turbinado sugar.

Bake on middle rack for 40-50 mins. Be careful not to over bake!

Let cool completely before slicing!! It will be gummy if you skip this step

Hot tip : eat with softened salted butter and a drizzle of maple syrup :)
