Roasted sweet potatoes with smoked salt and honey

In my opinion, these sweet potatoes are a main course but you could make em as a side too. I ate them in homemade flour tortillas with green mole. kiss kiss

Serves 2 -4

Recipe

  • 2 medium sweet potatoes

  • 1 cinnamon stick

  • 2 bay leaves

  • 1 tablespoon honey

  • 2 tablespoons butter

  • Smoked salt OR maldon salt, to taste

  • Black pepper

Preheat oven to 375F

Rinse and scrub sweet potatoes as necessary and place them whole in a medium cast iron pan along with bay leaves and cinnamon stick. Drizzle with a little oil to prevent any sticking.

Cover the pan tightly with aluminum foil and bake in oven for 45 mins - 1 hour.

Remove the cast iron from oven and (carefully!) take off the foil cover. The potatoes should be fully cooked through and tender. Check by piercing a sharp knife through the center of the potatoes.

Increase oven to 450F.

Slice each potato in half lengthwise. Arrange halves fleshy side up back in the cast iron pan. Distribute butter in little pieces over the sweet potatoes. Drizzle with the honey and season with smoked salt to taste.

Return the pan to the oven and roast for ~15 mins until the potatoes are browned and crisping on top.

Season with black pepper and serve.
